The method

Step by step

Written for first-time cooks — every quantity, timing and cue is spelled out.

  1. 01

    Gather and Prep Ingredients

First, gather all your tools: chopping board, knife, small mixing bowl, grater, large mixing bowl, spatula, sandwich griller/toaster, and butter knife. Ensure your potato is already boiled, peeled, and mashed smoothly in a small mixing bowl. Slice the cucumber and tomato thinly into rounds using your knife and chopping board. Slice the onion into very thin rings. Finely chop the coriander leaves and keep them ready.

  2. 02

    Prepare Potato Filling

To the mashed potato in the small mixing bowl, add 1/4 teaspoon of salt and 2 tablespoons of finely chopped coriander leaves. Mix everything together very well with a spatula until the salt and coriander are evenly distributed. This is your potato filling.

  3. 03

    Butter the Bread Slices

Take two slices of bread. Using a butter knife, spread 1 tablespoon of softened butter evenly on one side of each bread slice. Make sure the butter covers the entire surface right to the edges.

  4. 04

    Apply Green Chutney

Now, flip the buttered bread slices over. On the unbuttered side of each slice, spread 1 tablespoon of green chutney evenly using your butter knife. This will add a tangy and spicy kick.

  5. 05

    Layer the Potato Filling

On one of the chutney-spread bread slices, gently spread half of the prepared potato filling. Use your butter knife or spatula to spread it evenly from edge to edge. Don't press too hard, just a gentle layer.

  6. 06

    Arrange Veggies and Season

Carefully arrange half of the cucumber slices, tomato slices, and onion rings over the potato filling. Try to overlap them slightly to cover the entire surface. Sprinkle 1/2 teaspoon of chaat masala evenly over the layered vegetables. This adds a unique tangy and savory flavor.

  7. 07

    Assemble the Sandwich

Place the second chutney-spread bread slice (chutney side down, buttered side up) on top of the layered vegetables. Gently press down on the sandwich with your palm to hold everything together. Repeat steps 3-7 for the second sandwich.

  8. 08

    Grill the Sandwich

Preheat your sandwich griller/toaster. Once hot, place one assembled sandwich inside. Close the griller and cook for 3-5 minutes, or until the bread turns golden brown and crisp. You'll see grill marks and the butter will melt, making the bread crunchy. The smell will be toasty and savory.

  9. 09

    Serve Hot

Carefully remove the grilled sandwich from the griller using a spatula. You can cut it diagonally into two triangles or serve it whole. Repeat the grilling process for the second sandwich. Serve immediately with extra chutney or ketchup if desired. Enjoy your homemade Bombay Veg Sandwich!
