The method

Step by step

Written for first-time cooks — every quantity, timing and cue is spelled out.

  1. 01

    Preparation & Rice Soaking

First, gather all your tools: the large heavy-bottomed pot, kadai, mixing bowl, chopping board, knife, measuring cups, and spoons. Rinse the 2 cups of basmati rice under cold running water 2-3 times until the water runs clear. Place the rinsed rice in a large mixing bowl, add enough fresh water to cover it by at least 2 inches, and let it soak for 30 minutes. While the rice soaks, chop your vegetables as specified in the ingredients list: 1 medium carrot, 10-12 green beans, and 1 cup cauliflower florets. Finely chop one medium onion (about 100g) for the gravy and thinly slice the other medium onion (about 100g) for frying.

  2. 02

    Frying Onions for Garnish

Heat 1/4 cup of cooking oil in the kadai/wok over medium-high flame. Once the oil is shimmering, carefully add the thinly sliced onion. Fry, stirring occasionally with a slotted spoon, until the onions turn a deep golden brown and become crispy, which will take about 10-12 minutes. Be careful not to burn them. Once golden, remove the fried onions with the slotted spoon and spread them on a plate lined with a paper towel to drain excess oil. Set these aside; they are called 'birista' and will be used for garnish.

  3. 03

    Cooking the Vegetable Gravy Base

In the same kadai/wok with the remaining oil (or add a little more if needed to make 2 tbsp), reduce the flame to medium. Add the finely chopped onion and sauté for 5-7 minutes until it turns translucent and light golden. Add 1.5 tsp ginger-garlic paste and cook for another 1 minute until fragrant, stirring constantly to prevent burning. You should smell a pleasant, garlicky aroma.

  4. 04

    Adding Spices and Vegetables

Lower the flame to low. Add 1/4 tsp turmeric powder, 1 tsp red chili powder, and 2 tsp biryani masala powder. Stir well for 30 seconds until the spices are fragrant. Immediately add the chopped carrot, green beans, cauliflower florets, and 1/2 cup green peas. Stir to coat the vegetables evenly with the spices. Add 1 tsp salt and 1/4 cup water, mix, cover the kadai/wok, and cook on low flame for 8-10 minutes, or until the vegetables are about 70% cooked but still have a slight bite. They should not be fully soft.

  5. 05

    Curd and Herb Infusion

Remove the lid from the kadai/wok. Add 1/2 cup whisked curd, stirring continuously to prevent it from curdling. Cook on low flame for 2-3 minutes until the gravy thickens slightly and the oil starts to separate from the sides. Turn off the flame. Stir in 1/4 cup chopped fresh mint leaves and 1/4 cup chopped fresh coriander leaves. Mix gently. This is your vegetable gravy layer.

  6. 06

    Par-Boiling the Basmati Rice

While the gravy is cooking, place the large heavy-bottomed pot on a high flame. Add 8 cups of water, 1.5 tsp salt, and 4 lightly crushed green cardamom pods. Bring the water to a rolling boil. Drain the soaked basmati rice completely and carefully add it to the boiling water. Cook on high flame for exactly 5-6 minutes. The rice should be about 70% cooked, meaning it's still firm in the center but not hard. It should break if you press it between your fingers but not turn mushy.

  7. 07

    Layering the Biryani

Quickly drain the par-boiled rice using a colander. Do not rinse it. In the same large heavy-bottomed pot (which you used for boiling rice), spread half of the vegetable gravy evenly at the bottom. Carefully layer half of the par-boiled rice over the gravy. Sprinkle a generous pinch of the fried onions (birista), a few mint leaves, and a few coriander leaves over this rice layer. Drizzle with 1/2 tbsp ghee and half of the saffron milk (if using).

  8. 08

    Second Layer & Final Touches

Spread the remaining vegetable gravy over the first rice layer. Top with the remaining par-boiled rice. Sprinkle the rest of the fried onions, mint leaves, and coriander leaves. Drizzle with the remaining 1/2 tbsp ghee, saffron milk (if using), and 1 tbsp lemon juice. Ensure the layers are spread out evenly.

  9. 09

    Dum Cooking (Steaming)

Cover the pot tightly with aluminum foil, then place the tight-fitting lid on top. This creates a seal to trap the steam. Place the pot on a very low flame (the lowest setting on your stove). Cook for exactly 20 minutes. The biryani will cook in its own steam, a process called 'dum'. After 20 minutes, turn off the flame and let the biryani rest, undisturbed, for another 10 minutes. Do not lift the lid during this time.

    Serving

After the resting period, carefully remove the lid and foil. Using a large spoon or spatula, gently fluff and mix the biryani from the sides, ensuring you get some rice and gravy from the bottom. The rice should be perfectly cooked, fluffy, and fragrant. Serve hot with raita (yogurt dip) or a side salad. Enjoy your homemade Hyderabadi Vegetable Biryani!
