- 01
Prepare Your Workspace & Tools
First, gather all your ingredients and place them on your kitchen counter. Have your mixing bowl, whisk, measuring cups, and measuring spoons ready. Ensure your curd is at room temperature for about 15 minutes before starting, as this helps it whisk smoothly.
- 02
Whisk the Curd Smooth
Pour 2 cups (500ml) of curd into the mixing bowl. Using the whisk, beat the curd vigorously for about 1-2 minutes until it becomes completely smooth and creamy, with no lumps. It should look like a thick, pourable liquid.
- 03
Season the Curd
Add 1/2 tsp of salt, 1/2 tsp of roasted cumin powder, and 1/4 tsp of chaat masala to the whisked curd. Continue to whisk for another 30 seconds to ensure all the spices are well combined and evenly distributed throughout the curd.
- 04
Adjust Consistency (Optional)
If your curd mixture feels too thick, you can add 2 tbsp of water. Whisk it in thoroughly until the raita reaches a consistency you like – it should be thick enough to coat a spoon but still pourable.
- 05
Add the Boondi
Gently stir in 1/2 cup (50g) of boondi into the seasoned curd mixture using a spoon. Make sure the boondi is evenly distributed. Do not overmix, as this can make the boondi soggy too quickly.
- 06
Add Fresh Coriander
Sprinkle 2 tbsp of finely chopped fresh coriander leaves over the boondi raita. Stir it in gently with a spoon. The coriander adds a fresh, aromatic touch to the raita.
- 07
Chill the Raita
Cover the mixing bowl with a lid or plastic wrap. Place the raita in the refrigerator to chill for at least 10 minutes. This chilling time allows the boondi to soften slightly and the flavors to meld together beautifully.
- 08
Serve Your Boondi Raita
Once chilled, give the raita a quick stir before transferring it to a serving bowl. Your delicious Boondi Raita is now ready to be enjoyed as a cool and refreshing side dish with your meal. It pairs wonderfully with biryani or pulao.
