The method

Step by step

Written for first-time cooks — every quantity, timing and cue is spelled out.

  1. 01

    Gather Your Tools and Ingredients

First, get your large pitcher, lemon squeezer, measuring spoons, measuring cups, stirring spoon, and a small bowl ready. Wash your lemons and mint leaves thoroughly under running water. Ensure your water is already chilled from the refrigerator.

  2. 02

    Prepare the Lemons

Cut each of the 2 medium lemons in half. Using the lemon squeezer, squeeze all the juice from the lemon halves directly into the large pitcher. Make sure to catch any seeds with the squeezer or remove them with a spoon, as they can make the drink bitter.

  3. 03

    Add Chilled Water

Measure out exactly 500 ml of chilled water using your measuring cup. Carefully pour this chilled water into the pitcher with the lemon juice. The pitcher should now be about half full.

  4. 04

    Sweeten and Season

Add 2 tbsp of granulated sugar to the pitcher. Next, add 1/4 tsp of black salt and 1/2 tsp of roasted cumin powder. These spices give Nimbu Pani its unique tangy and savory flavor.

  5. 05

    Stir to Dissolve

Using your stirring spoon, stir the mixture vigorously for about 1-2 minutes. Keep stirring until you see that the sugar and salt have completely dissolved and there are no granules left at the bottom of the pitcher. The liquid should look uniform.

  6. 06

    Prepare the Mint

Take the 10-12 fresh mint leaves and place them in the small bowl. Gently 'bruise' the mint leaves by pressing and twisting them lightly with your fingers or the back of a spoon for about 30 seconds. This releases their fresh aroma and flavor.

  7. 07

    Infuse with Mint

Add the bruised mint leaves directly into the pitcher with the lemon water mixture. Stir gently for another 30 seconds to help the mint flavor spread throughout the drink. You will start to smell the refreshing mint.

  8. 08

    Chill and Serve

If you like your Nimbu Pani extra cold, add 4-6 ice cubes to the pitcher. Give it one final gentle stir. Your refreshing Nimbu Pani is now ready to be poured into glasses and enjoyed immediately!
