- 01
Gather Ingredients and Tools
First, get all your ingredients ready: 1.5 cups of chilled curd, 0.5 cup of chilled milk, 3 tablespoons of sugar, 0.25 teaspoon of cardamom powder, 6-8 ice cubes, and 2 tablespoons of fresh cream if you want to garnish. Make sure your blender, measuring cups, measuring spoons, and two tall glasses are clean and ready to use.
- 02
Add Curd to Blender
Carefully open your blender jar. Using a spoon, scoop all 1.5 cups of the chilled fresh curd into the blender jar. Make sure to get all of it out of the measuring cup.
- 03
Add Milk and Sugar
Next, pour 0.5 cup of chilled full-fat milk into the blender jar, on top of the curd. Then, add 3 tablespoons of granulated sugar. This is a good starting point for sweetness; you can add more later if you like.
- 04
Add Cardamom Powder
Now, add 0.25 teaspoon of green cardamom powder to the blender. Cardamom gives lassi its special aroma and taste. If you don't have powder, you can crush 3-4 green cardamom pods and use the seeds.
- 05
Add Ice Cubes
Drop 6-8 ice cubes into the blender jar. The ice will help make the lassi very cold and give it a nice frothy texture when blended. It also helps to slightly dilute the lassi to a drinkable consistency.
- 06
Blend Until Smooth and Frothy
Secure the lid tightly on the blender jar. Start blending on a low speed for about 15 seconds, then increase to medium-high speed. Blend for 1 to 2 minutes, or until the mixture looks completely smooth, creamy, and a little frothy on top. You should not see any lumps of curd.
- 07
Check Sweetness and Consistency
Carefully open the blender lid and take a tiny sip of the lassi with a spoon. If you prefer it sweeter, add 1 more tablespoon of sugar and blend for another 30 seconds. If it's too thick, you can add a splash (about 2 tablespoons) of chilled milk and blend again for 15 seconds.
- 08
Pour and Garnish
Pour the freshly blended sweet lassi into two tall glasses, filling them almost to the brim. If you like, gently spoon 1 tablespoon of fresh cream (malai) on top of each glass. Serve immediately and enjoy your homemade Punjabi Sweet Lassi!
