The method

Step by step

Written for first-time cooks — every quantity, timing and cue is spelled out.

  1. 01

    Prepare Rice and Tools

First, measure 1 cup (200g) of basmati rice into a mixing bowl. Rinse the rice under cold running water 2-3 times until the water runs clear, using a fine-mesh sieve to drain. Then, soak the rinsed rice in 2 cups (480ml) of fresh water in the mixing bowl for exactly 20 minutes. While the rice soaks, gather your heavy-bottomed pot with a tight-fitting lid, measuring cups, measuring spoons, and stirring spoon.

  2. 02

    Drain Rice

After 20 minutes, carefully drain all the soaking water from the rice using the fine-mesh sieve. Let the rice sit in the sieve for 2-3 minutes to ensure all excess water is removed. This step helps the rice cook evenly and prevents it from becoming mushy.

  3. 03

    Heat Ghee and Spices

Place your heavy-bottomed pot on the stove over medium heat. Add 1 tbsp (15ml) of ghee (or oil for vegan) to the pot. Once the ghee is melted and shimmering, which takes about 30 seconds, add 1 tsp of cumin seeds, the 1-inch cinnamon stick, 2 green cardamom pods, and 2 cloves. You will hear a gentle sizzling sound.

  4. 04

    Temper Spices

Let the spices cook for about 30-45 seconds, stirring gently with your stirring spoon. The cumin seeds will start to turn a light golden brown and release a fragrant, warm aroma. Be careful not to burn them; if they turn dark brown, they will taste bitter.

  5. 05

    Add Rice and Water

Carefully add the drained basmati rice to the pot with the tempered spices. Pour in 2 cups (480ml) of fresh water. Add 3/4 tsp of salt. Gently stir everything together once or twice to combine the rice, spices, and salt evenly.

  6. 06

    Bring to a Boil

Increase the heat to high and bring the water to a rolling boil. You will see large bubbles rapidly breaking the surface of the water. This usually takes about 2-3 minutes. Keep an eye on it to prevent it from boiling over.

  7. 07

    Cover and Cook

Once the water is at a rolling boil, immediately reduce the heat to the lowest setting. Place the lid tightly on the pot. Let the rice cook undisturbed for exactly 12 minutes. Do not lift the lid during this time, as the steam is crucial for cooking the rice properly.

  8. 08

    Rest the Rice

After 12 minutes, turn off the heat completely, but do not remove the lid. Let the pot sit on the stove, still covered, for another 5 minutes. This resting period allows the steam to redistribute and finish cooking the rice, making it fluffy.

  9. 09

    Fluff and Serve

After the 5-minute resting period, carefully remove the lid. Use a fork to gently fluff the rice, separating the grains. You will see perfectly cooked, separate grains of rice. Serve your delicious Jeera Rice immediately.
