Preparation & Marination
First, gather all your tools: a large mixing bowl, chopping board, knife, measuring cups and spoons. Wash 2 cups of basmati rice thoroughly under running water until the water runs clear, then soak it in 4 cups of fresh water for 30 minutes. While the rice soaks, finely chop 1 medium onion (about 100g) and set aside. In the large mixing bowl, combine the chicken pieces, chopped onion, 1 cup whisked curd, 1.5 inch grated ginger, 6 grated garlic cloves, 1/2 tsp turmeric powder, 1 tsp red chili powder, 2 tsp biryani masala, and 1 tsp salt. Mix everything well with your hands until the chicken is fully coated. Cover the bowl and let the chicken marinate for at least 30 minutes at room temperature.
- 02
Frying the Birista (Crispy Onions)
Thinly slice the remaining 2 medium onions. Heat 1/2 cup oil in a kadhai/wok over medium-high flame. Once the oil is hot (you can test by dropping a tiny piece of onion, it should sizzle immediately), add the sliced onions. Fry them, stirring occasionally, for about 10-12 minutes until they turn a deep golden brown and become crispy. This is called 'birista'. Be careful not to burn them. Once golden, immediately remove the birista with a slotted spoon and spread them on a kitchen towel to drain excess oil and cool. They will become crispier as they cool.
- 03
Cooking the Chicken Base
Reduce the flame to medium. In the same kadhai/wok with the remaining oil (if there's too much, remove some, leaving about 3 tbsp), add 6 lightly crushed green cardamom pods, 1 inch cinnamon stick, 4 cloves, and 1 bay leaf. Sauté for 30 seconds until fragrant. Now, add the marinated chicken mixture to the kadhai. Cook on medium flame for 5 minutes, stirring occasionally, until the chicken changes color and the masala starts to thicken. Do not add water; the curd will release enough moisture.
- 04
Partially Cooking the Rice
While the chicken cooks, take a large heavy-bottomed pot (at least 5-liter capacity). Fill it with 8 cups of water and add 1 tsp salt. Bring the water to a rolling boil over high flame. Once boiling, drain the soaked basmati rice and add it to the boiling water. Cook the rice for exactly 5 minutes on high flame. The rice should be about 70% cooked – it will still be firm but not hard, and you should be able to break a grain easily with your fingers. Immediately drain the rice using a colander.
- 05
Layering the Biryani
Once the chicken has cooked for 5 minutes and the masala has thickened, turn off the flame under the chicken. Spread half of the fried birista over the chicken base in the kadhai. Sprinkle half of the chopped fresh mint leaves and half of the chopped fresh coriander leaves over the birista. Now, carefully and evenly spread the partially cooked rice over this layer in the kadhai. Do not press the rice down.
- 06
Final Layering & Garnish
On top of the rice layer, sprinkle the remaining half of the birista, mint leaves, and coriander leaves. If using, drizzle 2 tbsp ghee evenly over the rice. If you have saffron soaked in milk, drizzle that over a few spots on the rice as well. This adds color and aroma.

Dum Cooking (Slow Cooking)
Place a tawa (flat griddle) on a low flame. Place the kadhai/wok with the layered biryani on top of the hot tawa. This indirect heat prevents burning. Cover the kadhai tightly with its lid. If your lid doesn't seal well, you can place a heavy object on top or seal the edges with dough. Cook on this very low flame for exactly 25 minutes. The steam trapped inside will cook the rice and chicken perfectly.

Resting and Serving
After 25 minutes, turn off the flame but do not open the lid immediately. Let the biryani rest, still covered, for another 10 minutes. This allows the flavors to meld and the rice grains to separate. After resting, gently open the lid. Using a large spoon or spatula, carefully fluff and mix the biryani from the bottom up, ensuring you get some chicken and masala with each serving. Serve hot with raita (yogurt dip) or salad.
